Hi Brian, My Dad did some work with the Chinese government some years ago so I asked one of his contacts about your patron's question. They told me that you can purchase Olympic themed stamps and related items from China National Philatelic Corporation (http://www.cpi.com.cn/cpi-eng/index.asp) click on the CPI-Shop link at the top of the page. Do note that the shopping site is in Mandarin.

Another option he suggested was having the patron's grandson write to the nearest Chinese embassy or consulate asking for the postmarked stamp. The consulate is generally quite happy to assist people (especially children) with requests of this nature.
